Chateau Fonréaud 2004°

If you want taste a wine young but intense, strong but well balance, PLEASE DO NOT TAKE THIS WINE !

If you have the choice, do not take this wine because 2004 is too young for this kind of wine. I tried, with some pasta (italian style in a traditional french restaurant in Paris). It was one of the most cheaper red wine in the wine list. With a friend we decided to take the risk of a Listrac-Medoc instead of a traditional Pessac-Léognan or a Pauillac (so “terroir” :) )

It was absolutely not the good choice, this red wine was to small (like a trousers too small for your legs). Only the smell is barely acceptable (but for a Bordeaux it’s the basics). And of course no finish at all except for the alcohol.

Please forget this one…. for this vintage.

For the record, the glass near the bottle in the picture, is not mine, but a decanter.

Quartz “Les Cailloux du Paradis” 2007 de Claude Courtois°

This wine is special, not so easy to taste.  I tried first with nothing, just before a sunday lunch with some friends. It start with a gentle flavour in the nose and in the mouth there is something totally different from others wine i had tasted.

It’s more acid and there no bitter finish like some classic white wines. Here, the finish is soft and sweet, the taste just disappears slowly.

After that, I tried with some sushis, and the balance was perfect: when you mix, wasabi, tuna, soya sauce, it become really hard to find a wine who leave his print on the mouth. I find this kind of wine… Thanks Mr Courtois.

Domaine Olivier Pithon Cuvée Laïs 2008°

If you do not know what you will eat, how many you could be to join the table, I recommend you this kind of wine. We tried with a lot of dishes. Not so strong flavor, not so much tannins, really easy to drink.

Domaine de Terrebrune 2005°

The story starts with an idea: A good french red wine with a big Salad. The kind of salad you make with Mozarella, Pine nuts, olive oil, Roasted goats milk cheese and Balsamic vinegar.

I had this “salad plan” in my mind when I arrived in the famous wine store located in the 18ème arrondissement of Paris.

And when you have this plan in mind before stepping in the store, it becomes really easy to find the perfect wine to match with.

Alone, in the wine store, the perfect match for me would have been a Saint Veran because the freshfull and the acidity of this white wine  could be perfect balance with the roasted cheese and the balsamic vinegar. However,  this kind of wine is not what my girlfriend likes. So I tried to forget the white wine and I go straight to the red. Obviously, for me in this wine store and after an overview, three choices arised:

Why these three wines ? Firstly beacause there are available in the store amongs a lot of other wines. Secondly because I have already drunk each before. Thirdly, because they each ones of them reminds me of something really difficult to explain: a mix between a souvenir and a beautifull taste. At the end of the day I chose the Bandol.

The flavor was not so strong, the color was dark, the taste was difficult to explain: the wine is well balanced between tanins and alcools. Although for the price paid (around 20 euros) it was not the good choice for my salad. Before leaving the store the guy said “please open this bottle when you arrived and wait for 2 hours before taste it“. That could be my mistake, because I did not respect that….

Who knows ? only those who taste every day….and the winemarker.

Saint Julien Chateau Terrey-Gros-Cailloux 1999 Cru Bourgeois°

Histoire d’annoncer une bonne nouvelle, j’ai décidé ce soir là d’ouvrir un bon vin qu’on m’avait offert il y a 18 mois.

Un vin de Bordeaux un peu vieux et j’avoue qu’il était tant de le boire

Le nez était un mélange d’alcool et d’épices. Je dis cela car j’ai le nez qui me pique si je sens trop longtemps ce vin. La couleur est douce pour un vin de 10 ans.

Pour le goût c’est plus difficile à décrire, une acidité qui se repartie de suite en bouche mais très simplement comme une musique douce qui commence. Ensuite tout est parfaitement maitrisé, la langue est emportée par des tannins doux et long. Puis, tout disparaît un peu… C’est un plus simple et plat sur la fin. Ensuite il y a une vague de retour un peu forte qui laisse un petit goût amer mais n’ayez crainte., cette vague est juste là pour que l’on puisse se resservir un verre….Et bien comprendre que le Bordeaux quand c’est bien fait c’est vraiment super bon

Plats choisis:

Salade de pignons et chêvre chaud.

Le vin est un peu fort pour ce type de plat.
